Sourdough Shortbread Cookies
These sourdough shortbread cookies are one of my husband’s favorite cookies. I have had recipe for over 20 years and recently wanted to create my own sourdough version using my sourdough starter. Shortbread cookies have an entirely different texture than a traditional chocolate chip cookie for example. These shortbread cookies are light and fluffy with a soft very soft texture. I usually will add chocolate chips and walnuts, but you can really add whatever type of nuts, chips, etc. to these cookies. I have also made them just plain and they were equally as fabulous.
Ingredients
- 2 cups of sugar
- 2 eggs
- 1 1/2 cups of vegetable oil
- 2 tablespoons of maple syrup
- 1/3 cup of buttermilk
- 1/2 teaspoon of salt
- 1/2 teaspoon of baking soda
- 1 teaspoons of vanilla
- 4 1/2 cups of flour
- 1/3 cup of fed sourdough starter
Steps
- Combine sugar and oil in a large mixing bowl.
- Add buttermilk and soda.
- Stir in the sourdough starter, maple syrup and vanilla.
- In a separate bowl sift flour and salt
- Add to wet ingredients and combine well.
- If desired add 1 to 1 1/2 cup of chocolate chips
- 1/2 cup of walnuts (optional)
- Let chill in fridge for 30 minutes.
- Bake at 350 degrees for 13 to 14 minutes.
- Let cool on wire rack.
