Sourdough Pumpkin Pancakes
One of my favorite food items to eat has to be pancakes. I also equally love anything pumpkin flavor, so I decided to put the two together and use my sourdough starter to create sourdough pumpkin pancakes. These pancakes are so delicious with just the right amount of tang from the sourdough and of course that wonderful pumpkin flavor. Ingredients
2 eggs
1 1/4 cup fed sourdough starter
1/4 cup can pumpkin
Dash of salt
1/2 tsp cinnamon
1/2 tsp pumpkin pie spice
1 tablespoon melted butter or coconut oil
1/4 plus 1 tbs flour
1 tsp baking soda
1/4 cup of buttermilk or oat milk
1 tablespoon of maple syrup
1 tablespoon of sugar
Additional butter/coconut oil to cook with
Steps
Mix together the pumpkin, eggs, sugar and sourdough starter.
Add in the spices, maple syrup, milk and melted butter.
Next sift in the flour with the soda.
Mix well and let the mixture sit for 10 minutes.
Take a ladle full of the mixture and pour in the heated skillet. Use the back of the ladle to move the mixture around the skillet in a circular motion. This will help thin the pancake out and will allow it to cook thoroughly. This technique can be adjusted so you can the right amount of thickness that you prefer for your pancake.
I usually cook one pancake at a time. I find this method works to make a perfectly cooked pancake. Of course, if you have a large family, you can always have a couple of skillets going on your stove.
I wait until there are tiny bubbles covering the top of the pancake before I turn it over. These sourdough pumpkin pancakes usually just take a couple of minutes as they are not too thick.

- 1/4 cup canned pumpkin
- 1 tbs maple syrup
- 1/4 cup flour
- 1 tbs flour
- 1/4 cup buttermilk or oat milk
- 1/2 tsp salt
- 1 tbsp melted butter
- 1 tsp baking soda
- 1 tbs sugar
Instructions
- Mix all ingredients in a large bowl.Let batter sit for 10 minutes.Melt butter or coconut in a non stick skillet.Pour one ladle full of batter at a time in non stick skillet.When bubbles appear on top of the pancake turn the pancake and cook until done.Cook one pancake at a time.
