Sourdough Pizza Crust
I love going out for pizza; however, with the prices these days it is much cheaper to make your own pizza at home and of course the taste is much better. I am a huge fan of wood fire pizza; however, without a pizza oven it is difficult to get that amazing flavor that a wood fire oven is known for. I do have a technique to cook my sourdough pizza where the taste reminds me of a wood fire pizza. I also make my pizza in a cast iron skillet which cooks your pizza as close as you can get to a pizza oven. However, you could also use a pizza stone and I think the results will be very close.
Ingredients
+ 3 cups of all-purpose flour
+ 1 cup of warm water
+ 1 tsp kosher salt
+ 1 tablespoon of olive oil
+ 1/2 cup of fed starter
+ 1 teaspoon of Italian seasoning (opt)
Steps
+ Mix water and fed starter well in a bowl.
+ Let sit for 30 minutes.
+ Add flour, salt, olive oil and seasonings and mix.
+ Knead dough a few times on a lightly floured surface.
+ Form into a ball and placed in a greased bowl.
+ Cover with a kitchen towel and let rest for one hour.
+ Form dough into a disk and wrap in plastic wrap.
+ Place in refrigerator overnight to ferment.
Baking Instructions for Sourdough Pizza Crust
+ Take dough out of refrigerator and let rest for one hour
+ Turn the broil on in your oven.
+ On a lightly flour surface use a rolling pin and roll out the dough into a circular shape.
+ Place dough in cast iron pan pushing the dough up on the sides to form a crust.
+ Add sauce and toppings.
+ Place the pizza under the broil in the oven until the crust is nice and brown and the cheese starts to char but not burn.
+ Finishing cooking the crust on a medium heat on your stove. Check the bottom of the pizza often as it can burn easily.
Tips
+ If you don’t have a cast iron skillet you can use a pizza stone that can withstand high heat.
+ I used all-purpose flour; however, you can use a combination of wheat and all-purpose.
+ This recipe can be cut in half to make two personal size pizzas or doubled to make two pizzas.
Enjoy!
