Sourdough Mini Dutch Baby
I love making a delicious Dutch baby for breakfast on the weekends for my family. I wanted to create a recipe however that I could include my sourdough starter. I have tried several, but they always ended up baking flat. I want that wonderful puffy texture that you get with a traditional Dutch baby. After many attempts I think I finally found the perfect ratio of ingredients. I used a 8-inch cast iron skilled but can be doubled to use with a 10 to 12-inch cast iron skillet as well.
Ingredients for Sourdough Mini Dutch Baby
+ 3 eggs
+ 1/4 cup fed sourdough starter
+ 1 tablespoon Maple Syrup
+ Dash of salt
+ 1/2 cup of milk (any kind)
+ 1/2 cup of flour plus one teaspoon
+ two tablespoons of butter
Steps
+ Mix 3 eggs in a bowl.
+ add sourdough starter and mix.
+ add milk, flour, salt and maple syrup.
+ Preheat an 8-inch cast iron skilled in a 425-degree oven with the two tablespoons of butter.
+ Pour egg mixture in skillet.
+ Bake for 25 minutes.
+ Sprinkle with powdered sugar (optional).
+ Serve with fresh maple syrup.
