Hello friends hope you are having a beautiful day I wanted to share today my version of Sourdough Mexican Cornbread. This is a delicious way to use up some of your sourdough discard. I recently made a hearty chili and created this recipe to go along with it.
I usually make regular cornbread but wanted to try something with a bit of heat. This sourdough cornbread had just the perfect amount of spice. However, if you don’t like a lot of heat, you can omit or reduce the number of jalapenos in this recipe or you can replace the jalapenos with another pepper such as a bell pepper.
What Ingredients Are Needed for Sourdough Mexican Cornbread
I wanted to make this recipe very simple so for the cornbread I used a box of Jiffy cornbread mix. This mix has all of the baking powder, salt, etc. already included in the mix which is very convenient.
Ingredients:
1 box Jiffy cornbread
1 egg
1/2 cup cream corn
1/4 cup of chopped jalapeno peppers (from jar)
1/3 cup of milk
1/4 cup of starter
1 tablespoon of butter or oil
1 cup of shredded cheddar cheese
Simple Instructions
This recipe is quick and easy and comes together in just a few minutes. The first step is to heat an 8-inch cast iron skillet in a 400-degree oven with one tablespoon of butter or oil. Mix all of the ingredients in one bowl and pour into the heated cast iron skillet. Bake at 400 degrees for 20 minutes or until the top is a nice golden brown.
If you do not have a cast iron skillet, use whatever baking utensil you have. I usually use cast iron to cook all of my baked goods, but I am sure any baking dish will work just fine.
What does sourdough do for cornbread?
I love using sourdough discard in my baking; however, I have never tried it with cornbread before. I have to say this cornbread turned out light and fluffy and so delicious.

Equipment
- 1 8 inch cast iron pan or any baking dish
- 1 mixing bowl
Ingredients
- 1 egg
- 1 box Jiffy cornbread mix
- 1/2 cup cream corn
- 1 cup shredded cheddar cheese
- 1/4 cup jar jalapeno peppers
- 1/3 cup milk
- 1/4 cup sourdough starter (fed)
- 1 tbs butter or oil
Instructions
- Add one tablespoon of butter or oil to an 8-inch cast iron pan and heat pan in oven until reaches 400 degrees. Mix all ingredients in a mixing bowl and pour into the heated cast iron pan. Bake 400 degrees for 20 minutes or until slightly golden brown on top.
