Rustic Roast Beef Hash
This rustic roast beef hash is one of our family’s favorite comfort foods. I got the idea of creating this recipe after I made a pot roast in the slow cooker and had a ton of leftovers. This recipe uses fresh ingredients such as sweet potatoes, onions and carrots. Of course, you can add whatever root vegetables you prefer, and I am sure it will turn out just as delicious. I used my variation of the Mississippi Pot Roast that is all over the web these days. I will share below my version if you are interested; however, any leftover pot roast will work just fine. The next time you are craving a delicious comfort food I hope you give this rustic beef hash a try.
