We love sourdough pancakes and I make them quite often for my family on the weekends. There is nothing like a warm sourdough pancake with butter and maple syrup in the morning. I have been working on a sourdough pancake recipe the last few months and I think I finally found the perfect pancake. If you like a pancake that is not too thick or too thin, then this is the pancake for you.
If your sourdough batter creates a thick pancake, the inside will take a lot longer to cook thoroughly than a traditional pancake. My batter produces a pancake that has just the right height and will cook the inside thoroughly without over cooking the outside. You are left with a perfect pancake that is light and fluffy.
Ingredients
1 1/2 cup of fed sourdough starter
1 tsp soda
1/4 cup plus two tablespoons of all-purpose flour
2 eggs
1/4 cup milk
1 tsp vanilla
1 tablespoon of melted butter or coconut oil
1 tablespoon of maple syrup
1 tablespoon of sugar (I use coconut sugar)
Dash of salt
Steps
+ Add your fed starter and eggs to a bowl and mix.
+ add the vanilla, maple syrup and milk.
+ Sift together in another bowl the flour and salt.
+ Once thoroughly mixed sprinkle the teaspoon of soda on top of the batter and let sit five minutes.
+Stir in the soda.
+ Melt a bit of butter in a nonstick pan over medium heat.
+ Add one kitchen ladle (1/3 cup) full of pancake mixture to the pan.
+ With the back of the ladle smooth out the batter in a circular motion.
+ Yields 5 pancakes
